Modern Dysphagia Cooking is written for those who experience difficulty swallowing, and their caregivers. Dysphagia is common among those with Head and Neck Cancer, Alzheimer’s Disease, Parkinson’s Disease, Multiple Sclerosis, Traumatic Brain Injuries, Stroke and the aging population, just to name a few. Unfortunately, dysphagia often leads to dehydration, poor nutrition, and choking. Therefore, we have created a cookbook that focuses on nutrition, presentation, and flavor, while also adhering to the diet levels of the International Dysphagia Diet Standardisation Initiative (IDDSI).
